Nutty... sort of day

Its been a weird sort of week at the office.  Its between the holidays, so people are on holiday vacations. This is usually the time where you get all the end of the year items completed and set up for the next year.

This is MY time to experiment with goodies... because co workers have guts... they tell you what tastes good and what needs to be trashed. They may not be honest about catchin you were a black shoe and a navy shoe, but they are good food critics!

I had left over nuts from the holidays, since I didn't go ALL OUT, and get my list of baking completed but for the most part I was happy with what I did do.

Curried Cashews (and peanuts)
The strang thing about this - the Curried Cashews recipe on the actual BH&G recipe site it TOTALLY different!  If you want the above recipe, you can find it below.

Curried Cashews
3 cups raw cashews (about 1 lb)
3 Tbsp. packed Brown sugar
2 tsp. kosher salt
2 tsp. curry powder
1/2 tsp. ground cumin
1/4 tsp. cayenne pepper
1/4 c. water
1 Tbsp. butter

Preheat oven to 350. Line baking sheet with foild or parchment paper. Spread cashews in an even layer on baking sheet, bake 10 minutes or until lightly browned.

In small bowl, combine 2 Tbsp of the brown sugar, salt, curry powder, cumin & cayenne peper - set aside.

In large saucepan, combine water, butter & remaining Tbsp of brown sugar. Bring to boil, stir constantly. Add cashews. Stir to coat. Cook & stir about 2 minutes, or until liquid is evaporated. Remove from heat. Add curry mixture. Toss gently to coat.

Spread  nuts in an even layer in the same baking pan. Bake for 12-15 minutes or until golden brown. Stir once. Cool in pan, on wire rack.

Store in airtight container at room temperature for 1 week.

So next I wanted to do something sweet! I have been OHHing and AHHHing  sugared nuts for a while, but I am picky... I wanted the crunchy ones! So I went on a search, and found these... by Simply Scratch

Sugared Cinnamon Almonds (and cashews & peanuts)

They are really tasty-- AND CRUNCHY!

I mixed Cashews, Almonds, & Peanuts in my batch! It was a simple enough that I may make some more as a NYE gift for the friends I usually visit!

Thank you for stopping by!

Lets have lunch...

(Salmon, Egg, Cucumber & Dill Panini with mayo)

WELCOME!

Lets sit and have lunch!

Its recently occured to me, that I am not only a kitchen gadget whore, but a foodie.

Its been a few months that I have admitted this defeat, and I am actually enjoying it! I have been taking pictures of the food I eat out, make at home, and share with others for quite some time. See how I play well with others? But it wasn't until a few weeks ago that I knew I had to just begin to blog about it. Just because that is the type of person I am.

I hope you enjoy your lunch - and visit often, the kitchen is usually open!
